Simple Salad w Charred Lemon Vinaigrette

Ingredients
5oz mixed greens
1 bulb fennel, finely sliced using mandolin
1/3 cup toasted pecans, roughly chopped
1/3 cup pomegranate seeds
Dressing:
Juice of 1 grilled lemon, squeezed
1 tablespoon champagne vinegar
1 shallot, finely chopped
1/2 cup olive oil
1 tablespoon whole grain mustard
1 teaspoon honey
Salt & fresh black pepper
Instructions:
To make the dressing, combine lemon juice, shallot, whole grain mustard, honey, salt and pepper in a bowl. Whish in olive oil until emulsified and smooth. Season to taste.
To a large bowl, combine all salad ingredients, reserving some pecans for the top
Gently toss the salad with dressing (you may not need all of it). Top with reserved pecans.
