Citrus Butter Lettuce Salad

Ingredients
2 heads of butter lettuce
1 orange, segments
1 grapefruit, segments
Chives
Microgreens
Dressing:
1 shallot, thinly sliced
2 tablespoons Champagne vinegar
1 teaspoon Dijon mustard
½ teaspoon honey
1/3 cup olive oil
Salt and pepper to taste
Instructions:
To a small bowl, add sliced shallots and cover with the vinegar. This will quick pickle the shallots.
Arrange butter lettuce on a flat serving platter, with small edge. Scatter the orange and grapefruit segments on top of the lettuce.
To the shallots, add Dijon mustard, honey salt, pepper and whisk in olive oil until mixture emulsifies and there is no separation of vinegar and oil. Taste and adjust for seasoning.
Spoon the dressing over the top of the salad. Top with chives, microgreens, and more flaky salt.
