Citrus Marinated Olives

Ingredients
1 jar Castelvetrano olives (whole, with pits)
1 jar kalamata olives (whole, with pits)
1 Orange
1 Lemon
Red wine vinegar
Red pepper flakes
Flaky salt
Parsley
Oregano
Spanish olive oil – GRAZA
Garnish: thyme
Instructions:
In a bowl, whisk together lemon, splash of red wine vinegar, olive oil, parsley, oregano, chili flakes, flakey sea salt.
Add in olives and orange peel.
Cover and marinate in the fridge for at least one hour. If marinating for longer than two hours and bring to room temperature before serving to loosen up the olive oil, as it will harden in the fridge.
Optional: serve with fresh springs of herbs (thyme looks beautiful!)
