Smashed Avocado Salad

Ingredients


  • 2-3 avocados, diced

  • 1 jalapeño, seeds and ribs removed, finely chopped

  • 1 scallion, thinly sliced

  • 2 tablespoons chives, chopped

  • ¼ cup cilantro, chopped

  • ¼ cup parsley, chopped

  • Juice of ½ lemon

  • Flaky salt


Instructions:


  1. Combine avocado, jalapeño, olives, chives, cilantro and lemon together in a bowl.

  2. Using the back of a fork, gently mash the avocado, keeping some chunks. Season with salt.
