
Ingredients:
2lbs organic party wings
1⁄2 teaspoon baking powder
1 teaspoon garlic powder
1⁄2 teaspoon salt
1 teaspoon fresh ground black pepper
For the Cacio e Pepe Sauce:
1⁄2 cup freshly grated parmesan cheese
LOTS of fresh black pepper (about 2 teaspoons)
3 tablespoons unsalted butter, melted
Chopped parsley, for serving
Instructions:
Place your chicken wings on a wire rack on top of a foil lined baking sheet. Leave them uncovered in the fridge for at least 30 minutes. This step is optional but will help to dry out the skin and produce a nice crispy exterior.
Preheat your oven to 425 degrees. Bring your wings to room temperature. Pat dry with paper towel if any moisture on them.
To a bowl, mix together baking powder, garlic powder, salt, ground black pepper. Toss with wings to evenly coat. Spray the
rack with non-stick spray.
Bake chicken wings for 30 minutes, flipping halfway through, until they are crispy and browned.
In a large bowl, mix the melted butter, parm cheese, black pepper and chopped parsley. Add the grilled wings to the bowl
and toss until wings are evenly coated.
Transfer wings to a serving platter and top with additional parm cheese and parsley if desired.
