Cacio e Pepe Wings | The Food Dragon Game Day Recipes

Writer: Brian LlorenteBrian Llorente

Ingredients:

  • 2lbs organic party wings

  • 1⁄2 teaspoon baking powder

  • 1 teaspoon garlic powder

  • 1⁄2 teaspoon salt

  • 1 teaspoon fresh ground black pepper

For the Cacio e Pepe Sauce:

  • 1⁄2 cup freshly grated parmesan cheese

  • LOTS of fresh black pepper (about 2 teaspoons)

  • 3 tablespoons unsalted butter, melted

  • Chopped parsley, for serving

Instructions:

  1. Place your chicken wings on a wire rack on top of a foil lined baking sheet. Leave them uncovered in the fridge for at least 30 minutes. This step is optional but will help to dry out the skin and produce a nice crispy exterior.

  2. Preheat your oven to 425 degrees. Bring your wings to room temperature. Pat dry with paper towel if any moisture on them.

  3. To a bowl, mix together baking powder, garlic powder, salt, ground black pepper. Toss with wings to evenly coat. Spray the

    rack with non-stick spray.

  4. Bake chicken wings for 30 minutes, flipping halfway through, until they are crispy and browned.

  5. In a large bowl, mix the melted butter, parm cheese, black pepper and chopped parsley. Add the grilled wings to the bowl

and toss until wings are evenly coated.

  6. Transfer wings to a serving platter and top with additional parm cheese and parsley if desired.
