Maple Delicata Squash with Herb Gremolata

Ingredients

  • 2 delicata squash, seeds removed and sliced into 1 inch half moons

  • 1 tablespoon maple syrup

  • 2 tablespoons olive oil

  • Salt

  • Pepper


Gremolata

  • 1 bunch of Italian parsley, flat or curly

  • Fresh thyme

  • Pomegranate seeds

  • Orange zest

  • Olive Oil (lemon flavored olive oil is amazing for this)


Instructions:

  1. Preheat oven to 425. Line a baking sheet with parchment paper.

  2. Combine maple syrup, olive oil, salt and pepper. Toss with squash and arrange on baking sheet.

  3. Roast for 25-30 minutes until lightly charred on the edges and fork tender

  4. Meanwhile, make the gremolata. Combine all ingredients and mix together. Coat well with olive oil, but not too much that it’s sitting

    in oil.
