
Ingredients:
1 cup full-fat greek yogurt
1/2 cup cucumber, finely grated with liquid squeezed out
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon white wine vinegar
1/2 teaspoon salt
1/4 cup dill, finely chopped
1-2 tablespoons mint, finely chopped
Optional garnish: mint, dill, drizzle of olive oil
Instructions:
Start by grating the cucumber into a kitchen towel placed over a bowl. Squeeze the water out of the grated cucumber.
In a medium size bowl, combine the yogurt, grated cucumber, lemon juice, vinegar, salt, dill and mint.
Refrigerate until ready to use. To serve, spread your tzatziki onto a plate and garnish with more herbs and olive oil. Serve with crudité or crusty bread.
