Ingredients – for the topping
1⁄2 cup gluten free flour
1 teaspoon cinnamon
1⁄4 teaspoon salt
1 cup gluten free old fashion oats
1⁄4 cup pecans
1⁄2 cup coconut sugar
8 tablespoons (one stick) butter, cubed
and room temp
Ingredients – for the apples
4-5 medium sized apples, mixed variety, sliced
Juice of half a lemon
1⁄4 cup coconut sugar
1⁄4 cup bourbon
1 teaspoon, arrowroot starch
1 teaspoon cinnamon
Pinch sea salt
Ingredients – for the maple mascarpone
8oz mascarpone
2 tablespoons organic maple syrup
1⁄2 cup heavy whipping cream
Instructions:
Preheat oven to 350°F.
Peel apples and immediately squeeze half lemon over it. This will keep it from going brown.
In a separate bowl, mix coconut sugar, bourbon, arrowroot, cinnamon and sea salt. Toss apples in mixture.
For the topping, mix all ingredients except for the butter. Add the softened butter and use your fingers to smear the butter and
combine well with the dry ingredients.
To Assemble: Coat a cast iron skillet, baking pan or individual ramekins with cooking spray. Add apples to each individual ramekin.
Sprinkle with oat topping.
Bake for 40-45 minutes until golden grown and apples are fork tender.
Serve with maple mascarpone cream or vanilla bean ice cream.
